The Inspiration behind Torrish…

Right outside our window is the beautiful River Ness, home to a collection of salmon pools. The Torrish fly that is commonly used for salmon fishing, is an object of exquisite beauty. This provided us with the perfect inspiration behind the naming of our restaurant.

Domaine de Chevillard Alpine Wine collection at Ness Walk

Jacquère,
Domaine de Chevillard, 2020, Savoie

Alpine wine made with Jacquère grape, a fresh and rich white variety from Alps. Notes of peach and tropical fruit and a mouthfil and creamy character on the palate. Mathieu Goury, the young winemaker behind this project, believes in an  “old school” approach, organic farming and using a very limited quantity of sulphites.

Jurtschitsch Alpine Wine collection at Ness Walk

The project of Alwin and Stefanie, a winemaker’s couple that run the family winery since 2010, farming the vineyards organically since when they started. Bright sparkling wines made with Grüner Veltliner the most popular grape in Austria. Green apple flavours on the nose and a very gastronomic palate!

Sgarzon Alpine Wine collection at Ness Walk

Sgarzon, Vigneti dell Dolomiti, Foradori, 2021, Trentino, Italy

A rich and elegant red from the Dolomites. Teroldego is one of the indigenous grapes of Trentino region.

Elisabetta Foradori, who contributed to rise the quality of the family winery, was one of the first biodynamic producer in the region.

Our commitment to supporting independent farms & growers

For every dish, our team have considered every element of the supply chain. Each culinary experience showcases the meat, seafood, plants, crops, dairy, culture, landscape, skill, and character that make the Scottish Highlands so special.

Meat is sourced from cattle reared in local farms, vegetables are sourced from our Loch Ness organic vegetable farm and herbs and garnishes are grown in our courtyard garden.
