Sustainable dining and eating in a sustainable way is a key focus of our sustainability goals. We want you to have an amazing experience when you visit Torrish at Ness Walk – we are confident of that!  And, we want to ensure that when we deliver that experience, we do it always with a focus on sustainability and regeneration.

How we prepare your dining experience

We work closely with local providers. Not only on ensuring the very best of quality, but also on how much carbon is used in the production of the food.  So much so, that we are currently in the concept stage of a new Torrish Supper Club focusing on just this – low carbon dining. In the sourcing of food, we consider the food miles; how far has it travelled and how did it travel? Is the fish sustainable? Where was it fished? Was the scallop dredged or hand-dived? Where is the meat from? What are the farms views on animal husbandry? How many miles has the wine travelled? Is it organic? Is it Biodynamic?

These are just some of the considerations we make when working towards providing a sustainable dining experience; and we hope our efforts give you confidence in our commitment sustainability and excellence. In the Ness Walk courtyard garden, we grow our own herbs and garnishes; and our kitchen and bar teams choose and harvest fresh herbs on a daily basis. Where we can, fruit is sourced locally too; from the Wester Hardmuir Farm.
