The Inspiration behind Torrish…

Right outside our window is the beautiful River Ness, home to a collection of salmon pools. The Torrish fly that is commonly used for salmon fishing, is an object of exquisite beauty. This provided us with the perfect inspiration behind the naming of our restaurant.

Maison Tardieu Laurent Les Bees Fins in the Torrish Bar

Côtes-du-Rhône Blanc Les Becs Fins, Tardieu-Laurent 2022

Based on a mix of 50% Viognier, 25% Grenache, 20% Roussanne, and 5% Clairette, the pale gold-hued white has a terrific perfume of orange blossom, honeyed flowers, white peach and apricot. Nicely textured, medium-bodied, and concentrated and with good acidity, it’s the perfect pairing for Scottish seafood.

Made with 100% Groppello grapes, this wine showcases a beautiful pale-pink color, fragrant aromas of wild strawberries, raspberries, and delicate floral notes on the nose. This beautiful wine is crisp and dry on the palate

Famille Maurel Cuvee Tradition Cabardès

The sun kissed vineyards of Cabardès lie in the foothills of the ‘Black Mountain’, near Carcassonne in the Languedoc-Roussillon. Alain Maurel established his winery here in 1973, blending classic Bordeaux varieties with their Mediterranean cousins, Syrah and Grenache. Here, a firm, ripe structure underpins spicy, plum fruit.

For every dish, our team have considered every element of the supply chain. Each culinary experience showcases the meat, seafood, plants, crops, dairy, culture, landscape, skill, and character that make the Scottish Highlands so special.

Meat is sourced from cattle reared in local farms, vegetables are sourced from our Loch Ness organic vegetable farm and herbs and garnishes are grown in our courtyard garden.
