The Inspiration behind Torrish

Right outside our window is the beautiful River Ness, home to a collection of salmon pools. The Torrish fly that is commonly used for salmon fishing, is an object of beauty. This provided us with the perfect inspiration behind the naming of our riverside restaurant.

The culinary team

Chef Gerard hails from the food-obsessed region of Burgundy and roots his passion for gastronomy in a rich career spanning Europe’s finest kitchens. This includes a decade at the iconic Andrew Fairlie at Gleneagles. His expertise is matched only by his love for Scotland’s natural bounty. Also an enthusiastic wild forager, Gerard has a gift for finding inspiration in the Highlands. He transforms ingredients like foraged wild garlic and Highland venison into dishes that sing of the season.

At Torrish, we work closely with local producers to ensure that we receive the freshest fish, quality cuts of meat and the best crops to serve to our diners. Our brigade of chefs even grow some ingredients and herbs right here in the grounds of Ness Walk. It doesn’t get fresher than that!

Tenuta delle Terre Nere is a benchmark Etna estate, with fabulous old bush vines planted on rocky and sandy volcanic soils on the north face of Mount Etna. The resulting wine is warming, suave but driven with a sedcutive quality. Notes of smoke, strawberry, rosehip and basalt, with controlled power and length.

Our commitment to sourcing locally

For every dish, our team have considered every element of the supply chain. Each dining experience showcases the meat, seafood, plants, crops, dairy, culture, landscape, skill, and character that make the Scottish Highlands so special.

Meat is sourced from cattle reared in local farms, vegetables are sourced from our Loch Ness organic vegetable farm and herbs and garnishes are grown in our courtyard garden.
