Wine Tasting of English Sparkling

Our tasting begins in the United Kingdom. This region, increasingly recognised for its finesse, now excels in sparkling wines. Specifically, the chalky hillsides of West Sussex are home to Ambriel Sparkling, a producer of traditional method English wines.

Their Classic Cuvée blends Chardonnay, Pinot Noir, and Pinot Meunier. These grapes grow on chalk soils once linked to Champagne. Moreover, the cool climate, moderated by the English Channel, allows grapes to ripen slowly and preserve fresh acidity.

As a result, Ambriel’s wines display bright aromatics and striking structure. Expect a crisp, refined sparkling wine with poise and balance. In many ways, this vineyard confidently rivals its French counterparts.

Renowned French Wine Region

From here, we move to Northern Burgundy, where the region’s cool latitude shapes one of the world’s great white wines. At the heart of this region, Domaine Vincent Dampt offers a brilliant example of classic Chablis. Vincent comes from a family with deep roots — three generations of Chablis winemaking. Even so, he brings a contemporary perspective, allowing the vineyard to speak through minimal intervention.

Notably, his vines grow on Kimmeridgian limestone, a fossil-rich soil that defines the style. Furthermore, Chablis’ cool temperatures produce grapes with vibrant acidity and subtle aromatics. The resulting wine is lean, mineral, and elegant — full of tension and precision. In short, it captures the purity and restraint that only a cool climate can offer.

Spain’s Northern Wine Region

Finally, our tasting journey leads to northwestern Spain and the mountainous region of Bierzo.
Here, the Atlantic Ocean’s influence creates a unique microclimate — cool, misty, and perfectly suited to elegant reds. In this setting, 70-year-old vines of Mencía thrive on steep slate terraces.

Salterio Mencía by Adegas Galegas shows how age and climate come together. Likewise, its mineral backbone reflects the slate-rich soils – dense and rounded, yet remaining lifted by a refreshing acidity. Because of its balance, this wine is incredibly versatile. Despite its intensity, this Mencía remains graceful – pairing with a range of dishes, from traditional Spanish charcuterie to roasted poultry.

Cheese & Charcuterie

Alas, your wine tasting includes a cheese and charcuterie grazing board; favouring local Highland cheeses and meats. Indulge in a selection of delicate cheeses – pairing perfectly with your wines.
